Meat & Chickpeas Maftoul
Ingredients:
- The Grain: 1 kg Maftoul (steamed).
- The Meat: 1.5 kg Lamb chunks (boiled until tender).
- The Broth: Red onions (lots of them), boiled chickpeas, and “Ein Jaradeh” (dried dill seeds).
- Spices: Caraway (essential), cinnamon, and black pepper.
Instructions:
- Sauté onions in olive oil until translucent, then add chickpeas and meat broth.
- Season the Maftoul with caraway and ghee.
- Serve the meat on top of the Maftoul and pour the thick onion-chickpea broth over it.
