Meat & Chickpeas Maftoul

Ingredients:

  • The Grain: 1 kg Maftoul (steamed).
  • The Meat: 1.5 kg Lamb chunks (boiled until tender).
  • The Broth: Red onions (lots of them), boiled chickpeas, and “Ein Jaradeh” (dried dill seeds).
  • Spices: Caraway (essential), cinnamon, and black pepper.

Instructions:

  1. ​Sauté onions in olive oil until translucent, then add chickpeas and meat broth.
  2. ​Season the Maftoul with caraway and ghee.
  3. ​Serve the meat on top of the Maftoul and pour the thick onion-chickpea broth over it.

Ingredients:​

2 cups Coarse brown bulgur.​1 cup Brown lentils.​4 Large onions (sliced for frying).​1/2 cup Olive oil.

Instructions:​

Boil lentils until half-cooked.​Add the washed bulgur to the lentils and cover with water.​Fry onions in olive oil until dark brown. Pour the oil over the bulgur and lentils.​Simmer until the water is absorbed. Top with the crispy onions.

Ingredients:​

2 cups Boiled chickpeas (hot).​1/2 cup Tahini.​1/2 cup Lemon juice.​2 cloves of Garlic (crushed).​The Spicy Sauce (Tatbilat): Green chili, lemon, and garlic mashed together.​Topping: Extra virgin olive oil and paprika.

Instructions:​

Keep some whole chickpeas aside. Mash the rest slightly while they are hot.​Whisk tahini, lemon juice, and garlic with a little warm chickpea water until creamy.​Fold the warm chickpeas into the tahini mixture.​Pour the spicy lemon-chili sauce on top.​Drizzle generously with olive oil and serve immediately.
