Meat & Chickpea Maftoul

Ingredients:​

The Grain: 1 kg Maftoul (steamed).​The Meat: 1.5 kg Lamb chunks (boiled until tender).​The Broth: Red onions (lots of them), boiled chickpeas, and “Ein Jaradeh” (dried dill seeds).​Spices: Caraway (essential), cinnamon, and black pepper

Instructions:​

Sauté onions in olive oil until translucent, then add chickpeas and meat broth.​Season the Maftoul with caraway and ghee.​Serve the meat on top of the Maftoul and pour the thick onion-chickpea broth over it.
