Meat & Chickpea Maftoul
Ingredients:
The Grain: 1 kg Maftoul (steamed).The Meat: 1.5 kg Lamb chunks (boiled until tender).The Broth: Red onions (lots of them), boiled chickpeas, and “Ein Jaradeh” (dried dill seeds).Spices: Caraway (essential), cinnamon, and black pepper
Instructions:
Sauté onions in olive oil until translucent, then add chickpeas and meat broth.Season the Maftoul with caraway and ghee.Serve the meat on top of the Maftoul and pour the thick onion-chickpea broth over it.
