Palestinian Shakshuka

Ingredients:​

Vegetables: 4 large tomatoes (chopped), 1 onion (diced), 2 cloves of garlic (minced), 1 bell pepper (diced).​Eggs: 4-6 fresh eggs.​Spices: Cumin, Paprika, salt, and black pepper.​Fat: 3 tbsp Olive oil.

Instructions:

​Sauté onions, garlic, and bell pepper in olive oil until soft.​Add chopped tomatoes and spices. Cook until the tomatoes form a thick sauce.​Use a spoon to make small wells in the sauce and crack an egg into each well.​Cover the pan and cook on low heat until the egg whites are set but yolks remain slightly runny.​Garnish with fresh parsley and serve with bread.
