Palestinian Shakshuka
Ingredients:
Vegetables: 4 large tomatoes (chopped), 1 onion (diced), 2 cloves of garlic (minced), 1 bell pepper (diced).Eggs: 4-6 fresh eggs.Spices: Cumin, Paprika, salt, and black pepper.Fat: 3 tbsp Olive oil.
Instructions:
Sauté onions, garlic, and bell pepper in olive oil until soft.Add chopped tomatoes and spices. Cook until the tomatoes form a thick sauce.Use a spoon to make small wells in the sauce and crack an egg into each well.Cover the pan and cook on low heat until the egg whites are set but yolks remain slightly runny.Garnish with fresh parsley and serve with bread.
